Summer Tea Popsicles
As we approach the end months of summer, some parts of the US (ahem, Nashville) are still in a heat wave. There are so many ways to beat the heat and one of our favorite treats is popsicles.
When I was a kid, my mom was a health nut. No sugar, raised vegan, and cookies were dates, almonds, and coconut glued together with applesauce, baked. Meanwhile all my friends got delicious popsicles and otter pops with REAL sugar. Fast forward to adulthood and my appreciation for vegan and healthy recipes expanded. I now love all those weird substitutions and enjoy experimenting on my own.
Tea might seem an odd base for a sweet summer treat, but blended with just the right fruits, ingredients, or coconut cream it can become a staple. All you need is a popsicles freezer mold and a sense of adventure.
Thai iced tea is a delicious and rich flavor, add a touch of cream for a memorable popsicle.
Here we have a base of berry tea, honey (the easiest way to sweeten healthfully), and Greek yogurt.
Don’t forget the Japanese favorite, matcha! Paired perfectly with mint tea, chocolate, and a little coconut cream it makes a delectable summer after lunch pick me up.
Here we pair mango with a peach tea, easily thrown together by first cutting mango then pouring a cooled strong peach tea base over the fruit. Add a few drops of fresh lemon to brighten it up!
French Kiss makes an amazing popsicle! Made with French lavender, Egyptian camomile and add some honey for flavor, steep a strong batch and once cool- pour into freezer molds.
Rose tea mixed with fruit is another favorite of mine, I’m a big fan of making rose water sun tea for several hours. Once done, mix with any fruit of choice!
This looks like watermelon but don’t let it fool you! It’s a matcha base and a fruity tea with rose petals at the top.
Hibiscus and fruit is another excellent combo- because hibiscus can become tart feel free to add more honey to this one.
Is there anything better than a Summer Citrus? Add mint tea to any fruit for a winning combo.
