Locally sourced honey from one of our favorite farmers market colleagues, this honey is harvested ethically and with the bees in mind.

These bees live in the Cherokee National Forest, with a total of 1400 hives, the family that tends them is able to support a large part of the local community. In winter when the bees are more dormant and less active, the coalition of workers makes wooden hive boxes.

The bees are never fed sugar water like large commercial operations often do. When the bees need supplemental nutrients in the off season, they are fed their own honey. The honey is sourced from a single region in TN, not blended from several different countries. Three distinct colors and flavors are available in an adorable 3 oz glass jar.

This honey is raw honey, which means it has not been pasteurized. It comes out of the hive, containing trace minerals, enzymes, traces of pollen which are good for seasonal allergies, and is naturally antibacterial and anti inflammatory.

Three flavors are available-

  • Raw Sourwood - Light amber in color, this award winning culinary honey is collected from bees that live in an area where they can harvest honey from the unique Sourwood tree that only grows in certain areas of Appalachia. Sourwood honey is highly sought after, unlike the name suggests, it isn’t sour in flavor at all. This honey tastes buttery and smooth, caramel and well rounded. It has a tinge of cinnamon, anise, and cloves, people love it.

  • Raw Tennessee Mountain- A summer wildflower honey with a light floral flavor and copper color. This honey is a fine mixture of early blooming and summer trees, bushes and wildflowers; it has a seasonal spectrum of pollen. Many people take a tablespoon of this honey twice daily as a natural allergy remedy. A perfect alternative to sugar, Tennessee Mountain is sweeter than our Sourwood and Dark Wildflower. This honey is ideal in dessert dishes, hot and iced tea, hot cereal, on pancakes and for dipping sauces.

  • Raw Dark Wildflower Honey- This dark satin honey has a rich caramel flavor. Dark Wildflower honey stays in the hive until the end of September so the flavor reflects a mixture of tree, shrub and flower nectar. Dark Wildflower honey oxidizes in the hive; this increases the mineral and vitamin content; it also has a full spectrum of pollen. Many people take a tablespoon of this honey twice daily as a natural allergy remedy. Dark Wildflower is a perfect complement to coffee, smoothies, oatmeal or yogurt. Drizzle is over fresh fruit or cheese. It is an excellent baker’s choice for pies, cobblers and artisan breads. Chefs may consider this rich honey for barbecue sauces, sweet & sour glazes and marinades.
